Spinach and Feta Pie on Cauliflower Crust

Ingredients

  • Cauliflower - 1 head
  • Grated Parmesan cheese - 1 tablespoon
  • Egg whites - 8 pieces
  • Chicken Eggs - 2 pieces
  • Spinach - 8.8 oz
  • Feta cheese - 7.1 oz
  • Green Onion - 3 pieces
  • Dried Oregano - 1 teaspoon
  • Ground Black Pepper - 1 teaspoon

Step by Step guide

Step 1

Preheat the oven to 410°F.

Step 2

Clean and cut the head of cauliflower into pieces, place in the microwave for 5–7 minutes on full power. The cauliflower should become slightly soft.

Step 3

Process the cauliflower in a food processor until it becomes a puree, spread the mixture on a towel and flatten it with a spoon. Let it cool for 10–15 minutes. Gather the mixture in the towel like a pouch and squeeze well until all the water is removed and the mixture is almost completely dry.

Step 4

Whisk 2 egg whites and Parmesan with a fork in a bowl. Add the cauliflower. Mix well.

Step 5

Grease a baking dish with oil or spray, place the cauliflower, egg white, and Parmesan mixture in it. Evenly spread the mixture with a spoon, creating edges for the future pie. Bake in the oven for 10–15 minutes until lightly brown and the first crust forms.

Step 6

While the base is baking, prepare the filling. Mix the remaining egg whites and eggs in a large deep bowl with oregano, pepper, and torn spinach leaves. Cut the feta into cubes and add to the mixture. Add additional spices to taste.

Step 7

Pour the filling onto the prepared base, return to the oven for 30–40 minutes until the filling sets and a delicate crust forms.

Step 8

Serve the dish. You can drizzle with lemon for a more tangy flavor.
