Spinach and Green Onion Pie
Ingredients
- Spinach - 2 lbs
- Scallions - 10.6 oz
- Feta cheese - 17.6 oz
- Puff Pastry - 17.6 oz
- Chicken Egg - 1 piece
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Wash the spinach and green onions, trimming off any roots if present. Chop both types of greens, mix them together, and, using your hands, squeeze out any excess liquid.
Step 2
Mix the herbs with the feta cheese. Rather than just mixing, gently incorporate them with your hands, thoroughly mashing the cheese into the green mixture.
Step 3
Roll out the dough into two thin sheets to fit the size of the baking tray. Place one sheet on the bottom of the tray and evenly spread the cheese mixed with spinach and onion on top. Season with salt and pepper (the salt is optional, as feta cheese is quite salty on its own).
Step 4
Place another thin layer of dough on top, seal the edges, and brush the pie with beaten egg. Make some air vent holes. Then, place it in an oven preheated to 356°F for twenty minutes.
