Sponge Cake with Cottage Cheese and Bananas

Ingredients

  • Wheat Flour - 7.1 oz
  • Vanillin - ¼ teaspoon
  • Chocolate eggs - 4 pieces
  • Cottage cheese - 7.1 oz
  • Sour Cream - 7.1 oz
  • Bananas - 4 pieces
  • Sugar - 4 tablespoons
  • Jam - to taste

Step by Step guide

Step 1

Prepare the sponge cake. First, sift the flour, preferably twice. Separate the egg whites from the yolks. Pour the yolks into a separate bowl and the whites into a larger container. Whip the egg whites, gradually adding the sugar, one tablespoon at a time, while continuing to whip. By the time the sugar is finished, the egg white mixture should be white and quite thick. Next, start adding the yolks, again one tablespoon at a time, without stopping the whipping. Once this is done, set aside the mixer and move on to the flour. Gradually add the flour to the mixture while stirring gently from the bottom up with a spoon. Then quickly pour the resulting batter into a greased baking pan and place it in a preheated oven. Bake for about 25 minutes at 190–392°F. Do not open the oven while the sponge cake is baking! When the time is up, turn off the oven and do not take out the sponge cake for another 5 minutes, again without peeking. Follow the recipe strictly.

Step 2

While the sponge cake is baking, prepare the filling. Mash the cottage cheese well with a fork, add the sour cream, and half a banana, then whip. Cut the bananas into slices. Divide the sponge cake into 3 layers. Drizzle each layer with jam (optional), spread the cottage cheese filling, and top with banana slices.

Step 3

Decorate the cake as you wish. You can whip 50 g of sour cream with 1 tablespoon of sugar, and spread this on the top and sides. Place banana slices on the cake and sprinkle grated chocolate on top and around the sides.
