Sponge Cake with Homemade Fruit Leather
Ingredients
- Wheat Flour - 1 cup
- Sugar - 1 cup
- Chocolate eggs - 6 pieces
- Activated Baking Soda - ½ teaspoon
- Butter - 7.1 oz
- Vanilla salt - 1.1 oz
- Milk - 0.7 cups
- Brandy - 2 tablespoons
- Lime Syrup - 1 cup
- Ground Almonds - 1.8 oz
- Fruit Leather - 3.5 oz
Step by Step guide
Step 1
For the batter, beat 5 eggs with 1 cup of sugar using a mixer until fluffy. Gradually add flour and gently mix the batter with a spoon, lifting it layer by layer until it absorbs the flour. Add the baking soda.
Step 2
Grease a pan with vegetable oil and dust with flour. Pour the resulting mixture into the prepared pan. Bake at 392°F for 25–30 minutes. The sponge is ready when a toothpick inserted into it comes out clean.
Step 3
Once cooled, trim the top and bottom to create 3 layers.
Step 4
For the cream, whisk 1 egg and vanilla sugar in a saucepan until frothy.
Step 5
Pour in the milk and bring to a boil over low heat while stirring constantly, BUT DO NOT BOIL!!
Step 6
Add the cooled mixture to the butter one tablespoon at a time while whisking. Add 1 tablespoon of vodka (brandy, rum, etc.—40 proof drink).
Step 7
Add a tablespoon of brandy to the pear syrup, mix, and soak the sponge layers with the resulting syrup.
Step 8
On the bottom layer of the sponge, layer the fruit leather, then the soaked sponge, then the custard, followed by another soaked sponge. Cover the cake with the remaining cream on top and sides, and for decoration, sprinkle with almond crumbs.
