Description
I took a regular sponge cake recipe for the roll; you can use your favorite recipe. My baking tray is small (8x12 inches), as my oven is small, so this portion yields one roll like in the photo and one small one. If you have a larger baking tray, the roll will look much nicer.
Ingredients
- Egg white - 5 pieces
- Sugar - 7.1 oz
- Wheat Flour - 4.2 oz
- Cocoa Powder - 3½ tablespoons
- Condensed Milk - 1 can
- Salt - to taste
Step by Step guide
Step 1
First, take parchment paper the size of the baking tray and draw a giraffe design with a pencil in bold lines.
Step 2
Separate the yolks from the whites. Whisk the yolks with half a cup of sugar until thick and frothy.
Step 3
Whisk the egg whites with a pinch of salt until stiff peaks form. Gradually add the remaining sugar while continuing to whisk.
Step 4
Gently combine the yolk mixture and the egg white mixture, folding with a spoon from top to bottom.
Step 5
Sift the flour through a sieve into the mixture, carefully folding the batter from top to bottom.
Step 6
Line the baking tray with white paper (to make the design more visible), then with parchment paper, design side down. Grease the parchment and the sides of the tray with vegetable oil. Using a pastry bag or a piping bag, pipe the batter according to the design. Place the tray in the oven preheated to 180°C (350°F) for about 2–3 minutes.
Step 7
Meanwhile, sift cocoa into the remaining batter and gently mix.
Step 8
Remove the tray from the oven, carefully spoon the batter onto the design, and smooth it out with a spatula. This should be done as quickly as possible.
Step 9
Return the tray to the oven preheated to 180°C (350°F) for about 18–20 minutes (baking time depends on your oven's characteristics and the thickness of the batter). Once baked, remove the sponge and turn it out onto a towel. Remove the parchment.
Step 10
Flip the sponge, spread it with boiled condensed milk. Using the towel, roll it up and let it cool.
