Sponge roll with strawberry jam and whipped cream

Ingredients

  • Chicken Egg - 6 pieces
  • Wheat Flour - 2.3 oz
  • Jam - 10.6 oz
  • 10% cream - 8 fl oz
  • Dr. Oetker Cream Stabilizer - to taste
  • Powdered Sugar - 2 tablespoons

Step by Step guide

Step 1

Preheat the oven to 356°F.

Step 2

Now separate the eggs into yolks and whites.

Step 3

Transfer the yolks to a bowl and add 1 cup (115 grams) of powdered sugar.

Step 4

Beat the mixture with a mixer until it becomes fluffy and light yellow in color.

Step 5

Add the sifted flour and mix again until the mixture is homogeneous.

Step 6

Then, in a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form and add them to the yolks, gently folding the whites in with a spatula using upward motions (do not mix them thoroughly, otherwise, you will ruin the batter. It should remain fluffy and airy inside. This is the key to making a delicious sponge).

Step 7

Take a standard baking tray. Line the tray with parchment paper, grease it with vegetable oil, and lightly sprinkle with flour.

Step 8

Pour the batter onto the tray and spread it evenly with a spatula.

Step 9

Bake for 15–17 minutes in the preheated oven until golden brown.

Step 10

Place a clean towel on the work surface, lay a sheet of parchment paper on top, and sprinkle it with a little powdered sugar.

Step 11

Immediately after you take the sponge layer out of the oven, flip it onto the prepared towel.

Step 12

Carefully remove the top parchment paper that the batter was baked on.

Step 13

Now roll the sponge into a roll (to help it hold its shape. If you roll it later, the sponge may crack).

Step 14

Let it cool. After that, unroll it and spread jam on top.

Step 15

Then cover it with whipped cream. The cream is prepared very quickly. Just whip the heavy cream with 1–2 tablespoons of powdered sugar and a packet of stabilizer, if available, until fluffy. Roll the sponge back up and sprinkle powdered sugar on top.
