Ingredients
- Pears - 4 pieces
- Red Grape Juice - 13 fl oz
- Sugar - 10.6 oz
- Salt - a pinch
- Large eggs - 4 pieces
- Wheat Flour - 2.1 oz
- Starch film - 1 tablespoon
- Milk - 8 fl oz
- Ground Poppy Seeds - 3.5 oz
- Powdered Sugar - 2 tablespoons
- Egg white - 2 pieces
- Gelatin - 4 pieces
- Cream (40%) - 7 fl oz
- Cocoa Powder - 4 tablespoons
Step by Step guide
Step 1
Peel the pears and cut them into pieces (1 cm). Bring the wine and 150 grams of sugar to a boil, add the pears, and cook for 5 minutes. Leave to cool in the syrup.
Step 2
Preheat the oven to 392°F. Separate the egg whites from the yolks (4 pieces). Whisk the yolks with 2 tablespoons of sugar. Whisk the egg whites with a pinch of salt, gradually adding 2 tablespoons of sugar.
Step 3
Mix the flour, 2 tablespoons of cocoa, and starch. Add to the yolks and mix well. Gradually fold in the egg whites, trying to maintain the volume.
Step 4
Spread the batter onto a parchment-lined baking sheet and bake for 10 minutes. Remove from the oven and turn it onto a towel dusted with powdered sugar.
Step 5
Bring the milk, 75 grams of sugar, and poppy seeds to a boil. Quickly add 2 yolks. Heat, but do not boil. Remove from heat and stir in the pre-soaked and squeezed gelatin.
Step 6
Mix well and let cool. Whip the cream and fold it into the cooled mixture.
Step 7
Remove the paper from the sponge. Spread the cream, then place the pears on top. Roll the sponge using the towel. Refrigerate for at least 2 hours. Before serving, dust with the remaining cocoa.
