Ingredients
- Sprouting wheat - 26.5 oz
- Wheat Flour - 1.8 oz
- Coarsely Ground Rye Flour - 1.8 oz
- Kefir - 5 fl oz
- Clarified Butter - 1.8 oz
- Salt - 1 teaspoon
- Sugar - 1 teaspoon
- Activated Baking Soda - ½ teaspoon
- Sunflower Seeds - 0.9 oz
Step by Step guide
Step 1
Pass the wheat through a meat grinder twice (you can sprout the wheat yourself — rinse the grains with water, soak for a day, then drain the water, rinse again, and leave for another day in a closed container away from light).
Step 2
Knead the dough with all the ingredients (you can add the seeds to the dough or reserve them for topping), and let it rise for 30–40 minutes at room temperature.
Step 3
Shape small buns, place them on a greased baking sheet, sprinkle with seeds, and let them rest for 15 minutes under a damp cloth (this recipe yields about 18–20 buns).
Step 4
Preheat the oven to 200–482°F, and bake the buns for about 15–20 minutes.
