Description
Stained Glass Cookies with Mandarin Zest
Ingredients
- Wheat Flour - 6.3 oz
- Granulated sugar - 1.8 oz
- Ground Cinnamon - ½ teaspoon
- Milk - 1 tablespoon
- Butter - 3.5 oz
- Mandarins - 1 piece
- Candied fruits - 3.5 oz
Step by Step guide
Step 1
Preheat the oven to 356°F and line 2 baking sheets with parchment paper. In a bowl, combine the flour, butter (grated), sugar, mandarin zest, and cinnamon. Rub together with your hands until crumbly.
Step 2
Add the milk and knead until you have a soft dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm it up.
Step 3
Crush the candies into small pieces (using a rolling pin, for example). I think it's better to use jelly instead of candied fruits, as the candied fruits did not melt in the oven, so I will try making the cookies with jelly next time.
Step 4
Place the dough on a floured surface and roll it out to a thickness of 1 cm, or thinner. Cut out cookie shapes using large cookie cutters and transfer them to the parchment. In the center of each cookie, create a 'window' using small cookie cutters. Fill the openings with pieces of candies (a little, otherwise the filling will spread messily). You can also bake the cut-out centers of the cookies.
Step 5
Bake for 12 minutes, until the cookies are golden and the filling has melted. Remove from the oven and let sit for a few minutes to allow the filling to set.
