Star Cookies with Poppy Seeds
Ingredients
- Unbleached flour crackers - 10.6 oz
- Wheat Flour - 7.1 oz
- Salt - to taste
- Water - 12 fl oz
- Poppy seed paste - 1.8 oz
- Dry yeast - 0.4 oz
Step by Step guide
Step 1
Mix both types of flour, rub the yeast until it forms a fine crumb. Add salt, water, and knead the dough. Shape the dough into a ball, cover it, and let it rest for 1 hour.
Step 2
Place the dough on a surface, divide it into 12 pieces, roll them into balls, and let them rest for 5 minutes.
Step 3
Preheat the oven to 482°F.
Step 4
Spread the poppy seeds on a plate and fill a shallow bowl with water. Take 1 ball, slightly flatten it, dip it in water, and then roll it in the poppy seeds. Press the seeds into the dough. Place it on a floured surface and press down slightly with your hand. Make a diagonal cut in the center: it should go through but not reach the edges. Make two more cross cuts in the same way. You should have a snowflake shape. Then carefully spread the snowflake from underneath with your fingertips and turn it inside out – it will become a star. Repeat with the remaining dough balls and place them on a baking sheet. Cover with a towel and let them rise for 45 minutes.
Step 5
Place the stars in the oven. Spray the walls of the oven with a sprayer and bake for 10–12 minutes.
