Description

Stollen can be stored for several months and gets better with each passing day.

Ingredients

  • Sugar - 3.5 oz
  • Butter - 7.9 oz
  • Salt - 0.2 oz
  • Milk - 8 fl oz
  • Wheat Flour - 17.6 oz
  • Chopped almonds - 3.2 oz
  • Candied fruits - 2.6 oz
  • Rum - 2 fl oz
  • Orange zest - 1 piece
  • Dried cranberries with sugar - 2.6 oz
  • Ground Cinnamon - ½ teaspoon
  • Ground Nutmeg - ½ teaspoon
  • Citrus Zest Mix - 1 piece
  • Grated Ginger Root - ½ teaspoon
  • Raisins - 8.8 oz
  • Dry yeast - 0.5 oz
  • Cardamom - ½ teaspoon

Step by Step guide

Step 1

Combine all the ingredients for the dough and knead until you have a soft, non-sticky dough. Cover with a kitchen towel and let it rise for 1 hour.

Step 2

Meanwhile, place the dried fruits in a bowl and pour boiling water over them. Let sit for 2 minutes and then drain. Return the dried fruits to the bowl, add the candied fruits, and pour in the rum. Mix well and let sit for 1 hour while the dough rises.

Step 3

When the dough has risen, add the nuts, candied fruits, and dried fruits along with the rum to the dough and knead well again.

Step 4

Place the finished dough on a floured surface, roll it out slightly, and shape it into a stollen as shown in the photo (like an envelope). Transfer to a dry, clean baking sheet. Cover with a kitchen towel and let rise for 40 minutes.

Step 5

Preheat the oven to 374°F.

Step 6

Place the stollen in the preheated oven and bake for 60–70 minutes. The stollen should rise a bit and become nicely browned.

Step 7

Remove the baked goods from the oven, let cool for about 5 minutes, then quickly rub 50 grams of butter into the surface of the stollen. Immediately dust generously with powdered sugar (200–250 grams). The heat will cause the powdered sugar to start melting a bit. Keep dusting until the surface becomes consistently snow-white. This is how the famous stollen snow crust is made.

Step 8

Allow this wonderful baked good to cool completely. Store in a cool place, such as the refrigerator, and cut off a small piece each day.
