Description
The base of this ice cream is a creamy vanilla, into which chocolate flakes are added. There are many recipes for making the chocolate glaze, and you can use practically any.
Ingredients
- Milk - 11 fl oz
- 10% cream - 3 fl oz
- Butter - 1.8 oz
- Dry Malted Milk Powder - 0.7 oz
- Sugar - 3.5 oz
- Whole egg - 2 pieces
- Cocoa Powder - 2 spoons
- Dextrose - 0.7 oz
Step by Step guide
Step 1
The sugar prepared for the recipe should be divided into two parts — 40 grams and 60 grams, respectively; set aside the first part (it will be needed for making the glaze).
Step 2
Mix 60 grams of sugar, dry milk, and dextrose. Heat the milk (300 ml) to 167°F, then add the cream, egg yolks, and dry mixture, and blend with a hand mixer. Place the mixture in the refrigerator for twenty to thirty minutes.
Step 3
Make the glaze: combine butter, cocoa powder, 40 ml of milk, and 40 grams of sugar in a saucepan. Melt over low heat, bring to a boil, and then turn off the heat.
Step 4
Pour the mixture for the ice cream into the ice cream maker. When it begins to set, gradually drizzle in the glaze: it will harden as it is mixed, creating a beautiful marbled pattern.
Step 5
Scoop the prepared ice cream into dessert cups and serve.
