Description
In this pie, the main role is played by the flavor of slightly marinated strawberries in a balsamic salsa. Mascarpone is merely a background note. The pie crust can be made not only from puff pastry but also, for example, from shortcrust pastry.

- Puff Pastry - 17.6 oz
- Mascarpone Cheese Unagrande - 17.6 oz
- Whipped Cream - 7 fl oz
- Muscovado Sugar - 1 tablespoon
- Powdered Sugar - 3.5 oz
- Strawberry - 17.6 oz
- Balsamic Vinegar - 3 fl oz
- Honey - 1 tablespoon
- Vanilla Pod - 1 piece
- Butter - 1.8 oz
- Chicken Egg - 1 piece
Step by Step guide
Step 1
Split the vanilla pod lengthwise into two halves and scrape out the seeds with a knife. In a bowl, mix together the mascarpone, powdered sugar, whipped cream, and vanilla seeds.
Step 2
Mash 50 g of strawberries, transfer to a saucepan, and place over heat. Pour in the vinegar, add sugar, mix in honey, and simmer until thickened. Remove from heat, stir in butter, and add the halved remaining strawberries.
Step 3
Roll out the puff pastry to a thickness of 3 mm, place it in the pie dish, brush the edges with egg, line the bottom with parchment paper, add dry beans (or other legumes), and bake for ten minutes at 374°F. Remove the beans and parchment, then return to the oven for an additional five minutes. Take out and let cool.
Step 4
Spread the mascarpone over the cooled dough, then top it with the marinated strawberries.
