Strawberry Cheesecake with Meringue
Ingredients
- Egg white - 3 pieces
- Semi-soft cream cheese - 2 lbs
- Meringue - 20 pieces
- Strawberry - 14.1 oz
- Gelatin - 0.5 oz
- Vanillin - 1 teaspoon
- Sugar - 2 tablespoons
- Potato protein - 2 tablespoons
Step by Step guide
Step 1
Wash the strawberries and set aside 5–7 for decoration. Remove the stems from the remaining strawberries and blend them.
Step 2
Soak the gelatin in a few tablespoons of cold water. Let it sit for 5 minutes. Then pour in 150 ml of boiling water. Stir. Add sugar to the blended strawberries.
Step 3
Gently blend the strawberries with sugar, then add the water with gelatin. Blend again. Place the mixture of water, strawberries, and gelatin in the refrigerator for half an hour to thicken. In a large bowl, mix the cream cheese, vanillin, potato starch, and beat in the eggs.
Step 4
Beat the mixture with a mixer or whisk until smooth.
Step 5
Preheat the oven to 392°F. Line the bottom of a springform pan with parchment paper. Crush the meringue by hand.
Step 6
Place the crushed meringue at the bottom of the pan. This will be the bottom layer of the strawberry cheesecake.
Step 7
Pour the cream mixture over the meringue layer.
Step 8
Bake the cheesecake at 392°F for 10 minutes, then reduce the temperature to 302°F and bake for another 40 minutes. Once the surface of the cheesecake is set (not liquid), turn off the oven. Leave the cheesecake in the turned-off oven for another 10 minutes.
Step 9
Let the cheesecake cool in the pan.
Step 10
Spread a layer of strawberry mousse over the cooled cheesecake. Smooth it out. Cover with foil and place in the refrigerator for a few hours (preferably overnight).
Step 11
Once the strawberry cheesecake has set, carefully run a knife around the edges to detach it from the pan.
