Ingredients
- Freeze-dried strawberry powder - 7.1 oz
- Lemon - ½ piece
- Powdered Sugar - 5.3 oz
- Gelatin - 0.5 oz
Step by Step guide
Step 1
Thaw the strawberries. Save the juice. Blend the berries into a smooth puree using a blender.
Step 2
Add the gelatin and let it swell for a few minutes (follow the instructions on the package), then add the powdered sugar and lemon juice, mix, and heat over low heat, stirring, until the gelatin is completely dissolved. Do not boil!
Step 3
Now let the mixture cool to room temperature and whip with a mixer on high speed for 5–7 minutes until the mixture significantly increases in volume, lightens in color, and thickens.
Step 4
Line a mold for setting with parchment paper, pour the strawberry mixture onto the paper, and smooth it out. Leave in a cool place, uncovered, to set for a few hours.
Step 5
When the mixture has set, invert the mold onto a surface dusted with powdered sugar and remove the paper.
Step 6
Cut into cubes, roll in powdered sugar, and serve.
