Ingredients

  • Freeze-dried strawberry powder - 3.5 oz
  • Lemon - 1 piece
  • Crepe batter - 19.4 oz
  • Sugar - 4 tablespoons
  • Sour Cream - 2.6 oz
  • Semi-soft cream cheese - 2.6 oz
  • Mascarpone Cheese Unagrande - 2.6 oz
  • 33% Cream - 2 fl oz
  • Powdered Sugar - 1.4 oz

Step by Step guide

Step 1

Make the sour cream filling. To do this, mix the sour cream, cream cheese, mascarpone cheese, 33% cream, and powdered sugar until smooth. Transfer the filling to a piping bag.

Step 2

Make the strawberry sauce. Blend the strawberries with a tablespoon of sugar and the juice of one lemon in a blender.

Step 3

Add 3 tablespoons of sugar to the bottle with the crepe batter. Close the bottle and shake well.

Step 4

Place a skillet, preferably a crepe pan, over high heat to heat it up, then reduce the heat to just above medium. Pour in a little batter and cook for 1.5 minutes on each side.

Step 5

On a serving plate, place the first crepe. Squeeze a tablespoon of filling onto it – a total of three tablespoons for each crepe, and spread evenly.

Step 6

Drizzle two teaspoons of strawberry sauce over the filling. Repeat several times.

Step 7

Cover the finished cake and let it soak at room temperature for 30 minutes or in the refrigerator overnight.
