Strawberry Macarons

Ingredients

  • Almond - 3.9 oz
  • Sugar - 1.8 oz
  • Powdered Sugar - 7.8 oz
  • Egg white - 4 pieces
  • Red Food Coloring - 2 tablespoons
  • Heavy cream - 1 fl oz
  • Chestnut puree - 2.5 oz
  • White Chocolate - 2.5 oz

Step by Step guide

Step 1

For the filling, heat the cream, melt the chocolate in it, and add the strawberries. Bring to a boil. Pour into a deep container, cool, cover with plastic wrap, and refrigerate overnight.

Step 2

Blend the almond flour and powdered sugar in a blender. Then, spread it on a baking sheet and leave it in a preheated oven at 302°F for 2 minutes (for drying). Sift through a fine sieve.

Step 3

Whip the egg whites for about 2 minutes, then, without stopping, add the sugar. Whip for another 3 minutes. Use a spatula to fold in the almond-sugar mixture, mixing until it reaches a thick consistency.

Step 4

On a baking sheet lined with parchment paper, pipe out uniform circles no larger than 3 cm in diameter using a pastry bag with an 8 mm tip.

Step 5

Leave in the oven cooled to 122°F for 30 minutes for le croutage (the crust). This is very important.

Step 6

Then bake at 302°F for about 15 minutes.

Step 7

Let cool. Pipe cream onto half of the macarons, about the size of a hazelnut, and sandwich with the remaining halves.
