Ingredients

  • Strawberry - 2 lbs
  • Wheat Flour - 9.2 oz
  • Baking Powder - 3½ spoons
  • Sugar - 7 teaspoons
  • Butter - 11.3 oz
  • 33% Cream - 12 fl oz
  • Whole egg - 2 pieces

Step by Step guide

Step 1

Sift the flour and baking powder, then add four tablespoons of sugar. Mix with 240 grams of cold butter, cut into cubes, until the mixture resembles crumbs. Add 150 ml of cream and the crushed egg yolks, stir and mash with a fork. Continue kneading the dough with your hands until it becomes soft. Roll it out to a thickness of 2 cm. Use a pastry ring to cut out four circles with a diameter of 7 cm. Knead the leftover dough and roll it out to cut out two more circles.

Step 2

Place the rounds on a greased baking sheet. Brush with two tablespoons of melted butter and sprinkle with a tablespoon of sugar. Bake for twelve to fifteen minutes at 356°F. Let cool.

Step 3

Slice the strawberries and sprinkle with the remaining sugar, then refrigerate for twenty minutes.

Step 4

Whip 200 ml of cream. Cut the pastries in half horizontally. Place strawberries on the bottom halves, followed by the whipped cream, and cover with the top halves. Serve immediately, garnished with whipped cream.
