In this salad, blackberries and black currants can be replaced with other berries depending on the season.
Ingredients
- Donut Peaches - 1 piece
- Strawberry - 5.3 oz
- Watermelon - 3.5 oz
- Raspberry leaves - 1.8 oz
- Sugar - 1.8 oz
- Lime Juice - 2 tablespoons
- Serviceberries - 1.8 oz
- Dry Champagne - 2 fl oz
- Mint Leaves - 2 pieces
- Frozen black currant puree - 1.8 oz
Step by Step guide
Step 1
For the sauce, blend raspberries and part of the strawberries (50 g) with sugar and lime juice until pureed. Strain through a sieve to remove the seeds and chill.
Step 2
For the salad, cut the melon, strawberries (100 g), and peach (or nectarines) into small pieces and mix with blackberries and black currants, being careful not to damage the berries. Refrigerate for 1-1.5 hours.
Step 3
Serve the chilled salad in two dessert bowls, drizzled with berry sauce and champagne. Garnish with mint leaves.
