Ingredients
- Wheat Flour - 16.9 oz
- Butter - 8.5 oz
- Coarse Salt - 1½ spoons
- Strawberry - 1⅖ kg
- Sugar - 3.9 oz
- Corn Starch - 3.5 oz
- Orange juice concentrate - 2 spoons
- Orange zest - 1 tablespoon
- Vanilla Pod - 1 piece
- Heavy cream - 2 spoons
Step by Step guide
Step 1
In a food processor, pulse the flour with the butter and a teaspoon of salt until it resembles crumbs. Add 120 ml of ice-cold water and mix again until a uniform dough forms. Shape the dough into a ball, divide it in half, wrap both halves in plastic wrap, and refrigerate for an hour.
Step 2
Preheat the oven to 428°F. In a bowl, mix the halved berries with the remaining salt, half a cup of sugar, cornstarch, orange juice, orange zest, and the contents of the vanilla pod.
Step 3
Roll out the dough into thin circles with a diameter of 30 cm. Use one circle to line the bottom of a 20 cm baking dish and fill it with the filling. From the remaining dough, cut strips about 1 cm thick and arrange them on top in a lattice pattern, sealing the edges. Brush the strips with cream and sprinkle with sugar. Bake for one hour.
