Strawberry Puree

Ingredients

  • Strawberry - 2 lbs
  • Meyer Lemon Juice - 0 fl oz
  • Gelatin - ⅓ piece
  • Cream (40%) - 8 fl oz
  • Powdered Sugar - 3.5 oz
  • Whipped Cream - 5 fl oz
  • Natural Yogurt - 8.8 oz

Step by Step guide

Step 1

Place a large heavy pot over medium to high heat. Once heated, add the strawberries, quartered, lemon juice, and sugar. Cook for about 15 minutes, stirring frequently. Remove from heat.

Step 2

Dissolve the gelatin in cold water (you can add a few ice cubes). Let it sit for 10 minutes. Meanwhile, transfer the contents of the pot to a blender and blend until pureed. Pour into a large bowl.

Step 3

Then add the gelatin to the warm puree and stir until the gelatin is dissolved. Cover and refrigerate for about 1.5 hours. Then gently fold in the cream.

Step 4

Pour the yogurt into the puree, then add the whipped cream, mixing evenly. Divide into 6 portions and pour into cups. Cover with lids and refrigerate for at least 6 hours, preferably overnight.

Step 5

Before serving, mix the whipped cream with powdered sugar and use it to garnish the puree. Serve immediately or refrigerate for another 2 hours.
