Description
Sorbet is incredibly easy to make, but it does require some patience: it needs to be stirred every hour, and it freezes completely overnight. However, you can start your morning with it. In addition to sugar, you can add 15 grams of glucose — this will help the sugar crystals dissolve faster. The sorbet will also be a bit softer, making it easier to scoop into balls when serving.

- Strawberry - 10.6 oz
- Lemon - 1 piece
- Sugar - 2.6 oz
- Mint - 2 stalks
Step by Step guide
Step 1
Rinse the strawberries, remove the green stems and calyx, and slice them into wedges about three millimeters thick. Set aside three to four berries for garnishing.
Step 2
Place the sliced strawberries in a saucepan or bowl and sprinkle with sugar. Add lemon juice and 25 ml of water. Let it sit for at least fifteen minutes to allow the strawberries to macerate and release their juices.
Step 3
Blend the strawberries with a blender until you achieve a smooth puree; this will take about three to four minutes. After that, you can strain the strawberry puree through a sieve for a completely smooth texture, but this step is not strictly necessary. Some people even find the sorbet made from unstrained puree to be tastier.
Step 4
Pour the puree into a spacious container to allow it to spread into a thin layer. Place it in the freezer for an hour, then stir it with a fork to break up the ice and incorporate air into the sorbet. A sturdy whisk can be used instead of a fork. Return the sorbet to the freezer. Repeat the stirring process every hour for three more times. Leave the sorbet undisturbed in the freezer overnight.
Step 5
Using a tablespoon, shape the sorbet into balls and place them on plates. Garnish with strawberries, sliced into wedges, and finely chopped fresh mint.
