Strawberry Tart
Ingredients
- Strawberry - 14.1 oz
- Mint - 0.2 oz
- Wheat Flour - 5.7 oz
- Vanilla Pod - 1 piece
- Butter - 4.2 oz
- Farm fresh eggs - 4 pieces
- Milk - 7 fl oz
- Brown Sugar - 2.5 oz
- Salt - to taste
- Powdered Sugar - 1.4 oz
Step by Step guide
Step 1
Mix a large bag of flour, powdered sugar, and a large piece of butter until crumbly.
Step 2
Add half of one egg and a pinch of salt, mix until homogeneous, form into a ball, wrap in plastic wrap, and refrigerate for 15 minutes.
Step 3
Add the seeds and pod of vanilla to the milk, bring to a boil, and remove from heat.
Step 4
Separate the yolks of the remaining eggs from the whites, and beat the yolks with sugar until pale, add a small bag of flour, mix until smooth; gradually add the milk while continuously stirring the mixture.
Step 5
Pour the mixture back into the saucepan and cook over moderate heat for 1.5 minutes until the cream thickens, actively stirring and scraping the cream from the sides and corners of the saucepan, remove from heat and let cool for 5 minutes; fold in the remaining butter and refrigerate.
Step 6
Spread the dough evenly in the tart pan to a thickness of 0.5 cm, create edges, prick the bottom of the crust all over with a fork, and bake with weights in a preheated oven at 392°F for 20 minutes; transfer the crust to a plate and let it cool in the refrigerator for 15 minutes.
Step 7
Trim the white part of the strawberries, spread the cream into the cooled crust, smooth it with a spatula, decorate with strawberries and mint leaves, and serve.
