- Cottage cheese - 3.5 oz
- Whipped Cream - 2 fl oz
- Gelatin - 0.5 oz
- Blackcurrant liqueur - 0 fl oz
- Chestnut puree - 3.5 oz
- Strawberry - 5.3 oz
- Pectin - 0.2 oz
- Tarragon - 0.2 oz
- Starch film - 0.4 oz
- Milk - 5 fl oz
- Butter - 1.1 oz
- Fresh Berries - 1.4 oz
Step by Step guide
Step 1
For the dough: beat the butter, fructose, and salt until fluffy. Then add the two types of flour and gradually incorporate 1.5 eggs. Chill the resulting dough in the refrigerator for 30 minutes. Roll out the dough, cut into the shape of the tart, and bake for 15 minutes.
Step 2
For the cheese mousse: pass the cottage cheese through a fine sieve, mix with mascarpone, beat the yolks and 35 g of fructose, warm the gelatin mixture, and add the liqueur. Carefully mix all the ingredients together.
Step 3
For the strawberry confit: bring the strawberry puree to a boil, add the pectin, and then add finely chopped strawberries and tarragon. Pour into molds smaller than the tart and freeze.
Step 4
For the custard: add fructose to the milk and bring to a boil, then pour in the yolks and stir quickly. Dissolve the starch in a small amount of water and add it to the milk. When the custard starts to thicken, stir vigorously and add the butter.
Step 5
Fill the tart halfway with the cheese mousse, place the frozen strawberry confit in the center, pour the remaining cheese mousse to level it off, and spread a thin layer of custard on top. Arrange the wild strawberries on the custard.
