Ingredients

  • White Chocolate - 15.9 oz
  • Vanilla cream for cake - 1.1 oz
  • Strawberry - 1.1 oz
  • Pistachios - 0.1 oz
  • Butter - 5.3 oz
  • Almond - 1.1 oz
  • Wheat Flour - 8.8 oz
  • Salt - 0 oz
  • Farm fresh eggs - 2 pieces
  • Powdered Sugar - 3.2 oz
  • Gelatin - 0.4 oz
  • Milk - 10 fl oz
  • Vanilla Pod - 1 piece
  • Sugar - 0.5 oz
  • Heavy cream - 17 fl oz

Step by Step guide

Step 1

Cream the butter with powdered sugar, add the eggs, then mix in the flour to form a dough.

Step 2

Chill in the refrigerator for 30 minutes, then roll out to a thickness of 3 mm and bake at 347°F for 7-10 minutes.

Step 3

Bring the milk with vanilla and glucose to a boil, then combine with melted chocolate and gelatin.

Step 4

Blend, strain, and refrigerate for 8-10 hours. Pour the cold cream into the ganache and slowly whip at low speed, then increase to high speed until a pattern forms.

Step 5

Spread melted white chocolate on the finished tartlet, pipe the vanilla cream, and decorate with strawberries and ground pistachios.
