Ingredients
- Mascarpone Cheese Unagrande - 8.8 oz
- Savoiardi Cookies - 7.1 oz
- Orange juice concentrate - 3 fl oz
- Meyer Lemon Juice - 0 fl oz
- Powdered Sugar - 3.2 oz
- Freeze-dried strawberry powder - 8.8 oz
- Blue Curacao liqueur - 2 fl oz
- Whole egg - 2 pieces
- Egg white - 2 pieces
- Strawberry - 7.1 oz
Step by Step guide
Step 1
Thaw the strawberries, combine them with the juice and liqueur, and blend well until a smooth puree is achieved.
Step 2
Add sugar, 2 tablespoons of water, and a teaspoon of lemon juice to the egg whites, place over a water bath, and beat initially at low speed until the sugar dissolves, then increase the speed and continue beating for another 5 minutes. The cream will thicken; remove from heat and continue to beat until it cools.
Step 3
Mix the yolks with the remaining sugar and beat over a water bath until pale.
Step 4
Mash the mascarpone well with a spoon and mix in the beaten yolks. To prevent the mascarpone from curdling, gently fold in the beaten egg whites into the resulting cream.
Step 5
In a large dish or small portion cups, place a bit of cream. Dip the Savoiardi cookies one by one in the strawberry soaking mixture on both sides and tightly arrange them on top of the cream.
Step 6
On top of the soaked cookies, place a layer of thinly sliced strawberries. Then repeat the layer of cream — cookies — strawberries — cream once more. Cover the tiramisu with plastic wrap and refrigerate for 3 hours.
