Striped Berry Mousse
Ingredients
- Frozen black currant puree - 12.3 oz
- Dr. Oetker Cake Jelly - 1 piece
- Powdered Sugar - 2.6 oz
- Egg white - 2 pieces
- Vanilla extract - 1 teaspoon
- Natural Yogurt - 17.6 oz
- Fresh Berries - to taste
Step by Step guide
Step 1
Heat 25 grams of sugar and the frozen berries in a saucepan until the fruit starts to slightly thaw, then cover with a lid and 'cook' on low heat for another 7–8 minutes until soft. Remove from heat and let cool.
Step 2
Dissolve the gelatin in 100 ml of hot water according to the instructions, then let it cool.
Step 3
Whip the egg whites until foamy, then gradually add the remaining sugar and continue whipping until it reaches a meringue-like consistency.
Step 4
Place the yogurt in a bowl. Gradually add: the meringue, vanilla extract, and cooled gelatin.
Step 5
Spoon into molds: a few tablespoons of the yogurt mixture, then berry puree (gently swirl with a spoon for a spiral effect), and continue layering — yogurt/berries/spiral.
Step 6
Refrigerate for about 12 hours, then garnish with berries and serve.
