Strudel with Dates
Ingredients
- Wheat Flour - 2 cups
- Chocolate eggs - 3 pieces
- Butter - 4 tablespoons
- Water - ¼ cup
- Sugar - 3 tablespoons
- Dates - 8.8 oz
- Meyer Lemon Juice - 1 fl oz
- Safflower Oil - 1 tablespoon
Step by Step guide
Step 1
Remove the pits from the dates, cut them lengthwise into 4 pieces, place them in a bowl and squeeze the juice of one lemon (or the juice of one and a half lemons) over the dates, mix, and set aside to let the dates soak.
Step 2
For the dough, mix 2 eggs with 3 tablespoons of sugar, add ¼ cup of water, and mix again. In 2 cups of flour, add 2 tablespoons of softened butter. Mix until the flour is crumbly with 'buttery granules'. Add the egg mixture with sugar and water to the flour with butter, knead the dough. The dough will stick to your hands; once all the flour is mixed with the eggs, grease your hands with sunflower oil and knead the dough until smooth, shape it into a ball, and let it rest for 30–40 minutes.
Step 3
Sprinkle a board with flour, place the dough on it, flatten it into a rectangle with your hands, sprinkle with flour, roll it out a bit into a rectangle, and then stretch it by hand to a rectangle approximately 28 cm long, 19 cm wide, and 0.7–1 cm high.
Step 4
Melt 2 tablespoons of butter and separately beat one egg.
Step 5
Place the dates on the dough starting from one edge, leaving about 3–4 cm from one side and 6 cm from the other, with 3–3.5 cm on the sides.
Step 6
Fold the side edges first, then the edge where you left 3–4 cm, roll the dough into a log until you reach the end of the dates (covering them), lift the other edge and close the strudel. This way, all edges of the strudel are sealed.
Step 7
Brush with melted butter, then with the egg, and transfer from the board to a baking sheet with the sealed side down, brush the top side of the strudel with melted butter and then with the egg.
Step 8
Place in an oven preheated to 356°F for 30 minutes.
Step 9
Let the finished strudel cool, and trim any excess egg that dripped while brushing the strudel before baking.
