  • Wheat Flour - 15.9 oz
  • Farm fresh eggs - 4 pieces
  • Salt - a pinch
  • Sugar - 0.1 oz
  • Vegetable Oil - to taste
  • Citrus Zest Mix - to taste
  • Honey - 7.1 oz
  • Candied fruits - to taste
  • Pastry decorations - to taste

Step by Step guide

Step 1

Mix the flour with the zest, salt, and sugar, then mound it on a work surface. Make a well in the center and crack the eggs into it.

Step 2

Knead until smooth dough forms.

Step 3

Divide the dough into portions. Roll each portion into a rope about 1.5 cm thick. Cut the ropes into pieces. In a deep pot or skillet, heat vegetable oil over medium heat to 338°F.

Step 4

Fry the pieces of dough in batches until golden brown on all sides. The pieces should not be crowded in the skillet.

Step 5

Transfer the finished balls to paper towels to absorb excess oil.

Step 6

Prepare the syrup. Place honey and sugar in a small saucepan and set it on the stove. Over medium heat, stirring, bring to a boil until the sugar dissolves. Add the balls to the syrup and mix.

Step 7

Transfer to a serving dish in a mound or ring shape, interspersing with chopped candied fruits. Decorate with colorful sprinkles. Allow the struffoli to set and serve.
