Description
Soak the dates in water for about an hour beforehand.
Ingredients
- Dates - 1 cup
- Egg white - 2 pieces
- Cocoa Powder - 2 tablespoons
- Baking Powder - 2 teaspoons
- Corn Flour for Polenta - 3 tablespoons
- Wheat Flour - 1½ cups
Step by Step guide
Step 1
Remove the skin from the dates and blend them into a puree using a blender.
Step 2
Mix the date puree with cocoa powder, add the egg yolks, baking powder, and both types of flour.
Step 3
Whip the egg whites until frothy and gently fold them into the batter.
Step 4
Pour the batter into a mold; I used a silicone muffin mold. Bake in the oven at about 392°F.
