Ingredients
- Coarsely Ground Rye Flour - 1 cup
- Semolina - 1 cup
- Baking Powder - 2 teaspoons
- Ocean salt - a pinch
- Olive Oil - 2 fl oz
- Ground Almonds - 1 cup
- Erythritol - 3.5 oz
- Dark rice syrup - 1 fl oz
- Almond - 0 fl oz
- Pistachios - 1 cup
- Almond - 2 fl oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Line a baking sheet with parchment paper.
Step 2
Mix the flour, baking powder, and salt. In a saucepan, combine the olive oil, almonds, erythritol, and syrup, and place over medium heat. Cook, stirring, for about 3 minutes until smooth. Remove from heat and add the almond extract.
Step 3
Combine the almond mixture with the dry ingredients and mix well. Add the almond milk and knead again. With wet hands, roll small balls, then lightly press them onto the baking sheet and place a few nuts in the center. Bake for about 18 minutes. The pastries should be soft when you take them out of the oven. Immediately transfer them from the parchment to a plate.
