Sugar-Free Pumpkin Candies
Ingredients
- Pumpkin - 17.6 oz
- Honey - 3.5 oz
- Lemon - 1 piece
- Cinnamon - 0.4 oz
- Corn Starch - 1 tablespoon
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Peel the pumpkin and remove the seeds.
Step 3
Cut the pumpkin into cubes about 1 cm on each side.
Step 4
Squeeze the juice from the lemon.
Step 5
Transfer the pumpkin to a pot and cover it with water so that it is completely submerged. Add the lemon juice. Cook for about 6–7 minutes. The pumpkin should become tender but not mushy.
Step 6
Place the honey in a large bowl and dilute it with 2 tablespoons of warm water.

Remove the pumpkin from the water, allow it to dry, and transfer it to honey.
Step 8
Stir to coat each piece with honey, and let it soak for 40 minutes.
Step 9
Spread the pieces of pumpkin in a single layer on a parchment-lined baking sheet or on a dehydrator tray.
Step 10
Dry in a slightly open oven at 140°F for 5 hours (in a dehydrator, the pumpkin will take longer to dry).
Step 11
Sprinkle the finished candied fruits with cinnamon.
Step 12
To make the candied fruits last longer and prevent them from sticking together, you can also coat them in cornstarch.
