Description
Recipe taken from a book on Abkhazian cuisine.
Ingredients
- Wheat Flour - 3½ cups
- Milk - 1 cup
- Water - 1 cup
- Chocolate eggs - 2 pieces
- Butter - 3.5 oz
- Dry yeast - 0.5 oz
- Sugar - 1 tablespoon
- Suluguni Cheese - 12.3 oz
- Vegetable Oil - 3 fl oz
- Salt - to taste
Step by Step guide
Step 1
Heat a cup of water to 99°F, add sugar, a cup of flour, and yeast, and mix. Cover and place the mixture in a warm place for 15 minutes.
Step 2
Melt 100 grams of butter. Separate 1 egg into the white and yolk, beat the white with a pinch of salt. Sift the remaining flour onto the table in a mound and make a well in the center.
Step 3
Pour milk into the flour, add melted butter, yolk, and beaten egg white, pour in the yeast mixture, and knead the dough. Cover it and place in a warm place for 2–3 hours.
Step 4
Grate or finely chop the sulguni cheese, mix it with a raw egg, add a bit of softened butter and salt to taste. Mix everything thoroughly.
Step 5
Punch down the risen dough and roll it out into a thin layer. Cut out circles with a diameter of 4 cm, place a tablespoon of filling in the center of each, and pinch the edges of the dough.
Step 6
Heat melted or vegetable oil in a skillet and fry the pies on both sides until golden brown. Serve with honey and sour milk.
