Summer Bread Pudding with Berries
Ingredients
- Sourdough Bread - 8 slices
- Sugar - 3.5 oz
- Liqueur - 2 tablespoons
- Fresh Berries - 21.2 oz
Step by Step guide
Step 1
Trim the crusts off the slices of toast bread. Set aside a couple of slices, and place the rest in a pudding dish. The bottom and sides of the dish should be completely covered with bread.
Step 2
Clean the berries, place them in a saucepan, add 100 grams of sugar, bring to a boil, and simmer for a couple of minutes.
Step 3
Remove from heat, leave 3–4 tablespoons of syrup, and place the remaining mixture in the prepared dish. Cover with the remaining bread and press the pudding down with a plate and a weight.
Step 4
Place the dish with the weight in the refrigerator overnight.
Step 5
Before serving, invert the pudding onto a plate. Add the liqueur to the remaining syrup and drizzle it over the pudding.
