  • Dry yeast - 0 oz
  • Sugar - 10 oz
  • Salt - ½ spoons
  • Wheat Flour - 30 oz
  • Butter - 5 oz
  • Ground Cinnamon - 2 spoons
  • Whole egg - 1 piece

Heat the milk to 100°F; it should be warm, not hot. Dissolve the yeast in the milk. Add melted butter (100 grams), salt, and 110 grams of sugar.

Knead the dough, gradually adding flour. The dough should be elastic and come away from your hands; the longer you knead, the better it will be. Cover the dough with a towel and let it rest for about thirty to fifty minutes.

Knead the dough and roll it out to a thickness of 3 mm. Brush with melted butter (50 g), generously sprinkle with cinnamon and sugar, then fold in half. Cut the dough into long strips about 2.5 cm wide.

Brush the buns with lightly beaten egg yolk. Bake in a preheated oven at 430°F for about fifteen minutes.
