Ingredients
- Milk - 13 fl oz
- Butter - 7.8 oz
- Dry yeast - 0.5 oz
- Granulated sugar - 7.1 oz
- Wheat Flour - 26.5 oz
- Salt - ½ teaspoon
- Egg white - 1 piece
- Ground Cinnamon - 2 teaspoons
- Cardamom - 2 teaspoons
Step by Step guide
Step 1
In a medium saucepan, melt 110 grams of butter over low heat, then add the milk. When the mixture is warm, about body temperature (you can touch it with your pinky), remove the saucepan from the heat, add the dry yeast, and stir until evenly distributed. Set aside.
Step 2
In a large bowl, mix the flour, 110 grams of sugar, salt, and cardamom. Make a well in the center and pour in the warm butter-milk mixture. Using a wooden spoon, mix until the dough begins to form. When the dough stops being sticky, place it on a floured, clean surface and knead for 6–8 minutes until you have a smooth, elastic, firm dough. If you feel the dough is still sticking to your hands, add a little more flour. Transfer the dough to a clean, floured bowl, cover with a clean towel, and let it rise in a warm, draft-free place for 45–60 minutes. Take the remaining 110 grams of butter out of the refrigerator and let it soften.
Step 3
Preheat the oven to 428°F. Prepare the filling: mix the butter, 90 grams of sugar, and cinnamon with a fork until it forms a 'paste'.
Step 4
When the dough has risen, transfer it to a floured surface, divide it into 2 parts (this will make it easier), and roll it out into a rectangle about 3 mm thick. Spread the filling over the surface. Then, starting from the long side of the rectangle, roll it up into a log. Cut the log into about 12 pieces with a sharp knife.
Step 5
You can bake the individual rolls; it's convenient to use muffin tins (preferably wide) or just place them on a baking sheet lined with parchment paper. Alternatively, you can use a pie or cake pan, spacing the rolls apart, letting them rise, and then baking. This is especially convenient if you're expecting guests, as everyone can tear off a piece of the roll, which brings people closer together!
Step 6
In general, place the dough in the pans, brush with beaten egg for a nice golden color. Lower the oven temperature to 374°F. Bake the rolls for 15–20 minutes, or until they are golden brown.
Step 7
Repeat the process with the second half of the dough. These rolls are magical when warm! And with a glass of milk!
