Ingredients
- Salad Potatoes - 28.2 oz
- Sugar - 1 tablespoon
- Chinese Black Rice Vinegar - 2 tablespoons
- Vegetable Oil - 2 tablespoons
- Sichuan pepper - 1 teaspoon
- Leek - 1 piece
- Grated Ginger Root - 1 piece
- Red Long Chili Peppers - 3 pieces
- Coarse Salt - to taste
Step by Step guide
Step 1
Peel the potatoes and cut them into strips. Transfer to a colander and rinse under cold water until the water runs clear. Dry well.
Step 2
In a small bowl, mix 2 teaspoons of sugar and vinegar until the sugar dissolves.
Step 3
Heat a wok over high heat until it starts to smoke. Add the oil and spread it over the surface.
Step 4
Then add the Sichuan peppercorns, chili peppers, sliced leek, and ginger. Stir-fry for 30 seconds until fragrant.
Step 5
Add the potatoes and the remaining sugar, and cook, stirring, until the potatoes start to soften, about 10 minutes.
Step 6
Pour in the vinegar mixture and cook for another 3-6 minutes until the potatoes are nearly soft but still slightly crispy inside. Season with salt and serve.
