Ingredients
- Wheat Flour - 10.6 oz
- Milk - 1 glass
- Dry yeast - 1.8 oz
- Chicken Egg - 4 pieces
- Sugar - 7.8 oz
- Butter - 1.8 oz
- Vanillin - 0.1 oz
- Safflower Oil - 2 spoons
- Red Currant - 8.8 oz
- Fruit preserve - 2 spoons
- Starch film - 1 tablespoon
Step by Step guide
Step 1
Pour a cup of warm milk into a bowl, then dissolve 50 grams of yeast in it and add 1 tablespoon of granulated sugar. Mix well and then add a cup of sifted flour. Stir again and place the bowl in a warm spot for 20-25 minutes, until the mixture rises.
Step 2
In another bowl, add 50 grams of soft, warm butter or margarine, then add 5 tablespoons of sugar and mix well. Next, add 4 eggs (separating 1 yolk for brushing the pastries) and stir to combine.
Step 3
When the starter has risen, combine both doughs in one bowl, gradually adding the remaining flour (3.5 cups), and knead the dough (add as much flour as the dough requires; it could be more or less than 4 cups). Next, drizzle the dough with vegetable oil (2 tablespoons) and continue kneading. After that, leave the dough in the bowl, cover it with a towel, and let it rest for another 30-35 minutes.
Step 4
While the dough is rising, prepare the filling: mix the currants with any jam. In a separate bowl, combine 200 grams of sugar with cornstarch.
Step 5
Once the dough has risen, divide it into 2 portions and roll each portion into a log, cutting off small pieces for the pastries. Roll each piece into a ball and fill it with the filling.
Step 6
First, place sugar on the rolled-out dough ball, then add the filling. The edges must be sealed tightly to prevent the filling from spilling out during baking.
Step 7
Next, brush the pies with egg yolk and place them in the oven for 15-20 minutes at 356°F.
