Sweet Cornbread with Buttermilk
Ingredients
- Water - 1 cup
- Buttermilk - 0.6 cups
- Whipped Cream - 0.3 cups
- Sugar - 2½ tablespoons
- Honey - ½ teaspoon
- Coarse Salt - ¼ teaspoon
- Coarse Cornmeal - 0.6 cups
- Farm fresh eggs - 2 pieces
- Cream of tartar - a pinch
- Chili jam - to taste
Step by Step guide
Step 1
Grease 6 small molds with butter and lightly sprinkle with sugar.
Step 2
In a saucepan, combine water, buttermilk, cream, 2 tablespoons of sugar, honey, and salt. Bring to a boil, stirring constantly. Gradually add cornmeal, reduce heat, and cook for 2 minutes. Remove from heat and stir in the egg yolks.
Step 3
In a clean bowl, beat the egg whites with a pinch of cream of tartar until stiff peaks form. Fold into the batter. Divide the batter among the molds and place on a baking sheet.
Step 4
Preheat the oven to 374°F (375 degrees Fahrenheit). Bake the bread for about 22 minutes until done. Serve immediately with strawberry jam.
