Ingredients
- Milk - 22 fl oz
- 33% Cream - 8 fl oz
- Wheat Flour - 8.5 oz
- Farm fresh eggs - 4 pieces
- Sugar - 1.1 oz
- Salt - a pinch
- Vanilla extract - 0 fl oz
- Butter - 2.1 oz
Step by Step guide
Step 1
In a large bowl, mix 650 ml of milk, cream, and eggs. Whisk well. Gradually add the flour and then the remaining milk, sugar, salt, and vanilla. Strain the batter through a sieve to remove lumps. Refrigerate for 1-2 hours.
Step 2
Lightly grease a crepe pan with butter and heat well over medium heat, but not until smoking. Whisk the batter again lightly.
Step 3
Pour about 30 ml of batter onto the pan and quickly spread it over the surface. Cook for about 15-20 seconds until the edges of the crepe are golden brown. Then, using a knife, carefully flip the crepe and cook for another 20 seconds. Transfer to a plate and keep warm.
Step 4
Repeat the same process with the remaining batter, greasing the pan with butter.
Step 5
Fill the crepes with any sweet filling and serve immediately.
