Sweet Khinkali

Ingredients

  • Wheat Flour - 2 lbs
  • Sugar - 8.8 oz
  • Sour Cream - 7.1 oz
  • Butter - 3.5 oz
  • Chocolate eggs - 5 pieces
  • Activated Baking Soda - a pinch
  • Safflower Oil - 1 qt
  • Powdered Sugar - 1.8 oz

Step by Step guide

Step 1

To knead the dough, first beat the eggs with sugar.

Step 2

Add baking soda to the flour. Then pour in the beaten eggs.

Step 3

It's best to take the butter out of the refrigerator in advance: it's easier to mix it with sour cream when it's soft. Combine the resulting mixture with the other ingredients. Optionally, you can add black cumin to the dough for a crispy texture.

Now let the dough 'rest' for at least ten minutes.

In the meantime, prepare the baking dish for the khinkali. A pot like a cauldron with thick walls is ideal. Pour the oil in portions as it evaporates, so that the pieces of dough are almost completely covered.

Divide the dough with a knife into several pieces. On a board, shape it into a 'sausage' about three to four centimeters thick. Then cut it into pieces a few centimeters wide.

Step 7

Before the khinkali goes into the well-heated oil, it needs to be shaped into a bumpy form.

After that, the khinkali goes into the cauldron.

Step 9

Don't put too many in at once; the dough will expand, and there should be enough space in the pot. The first batch usually takes a bit longer to fry until the oil reaches maximum heat. Fry over medium heat to ensure everything is cooked through.

Step 10

The degree of readiness is determined by color. The khinkali should acquire a distinct brown 'tan' rather than just being golden. Each side takes about two minutes to fry.

Step 11

After the khinkali cools slightly, sprinkle with powdered sugar for decoration. It can then be served with tea.
