Description
Sweet pancakes with baked apples, nuts, and honey evoke associations with an Austrian strudel, but they are easier and quicker to prepare. If you add a bit of ginger to the filling, it will have a spicy warming effect, which is quite welcome during the season of colds.

- Apple - 7.1 oz
- Honey - 3 spoons
- Ginger - 0.7 oz
- Walnuts - 1.8 oz
- Butter - 1.4 oz
- Vegetable Oil - 0 fl oz
- Thin Crepes - 6 pieces
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Peel the ginger and slice it into rounds.
Step 3
Slice the apples and remove the core.
Step 4
Place a skillet with butter over medium heat. Allow it to melt. Once the butter starts to bubble, add the apples. Reduce the heat and sauté the slices for about 2–3 minutes, being careful not to stir too much so they maintain their shape, until golden brown on all sides. Transfer the sautéed slices to a plate.
Step 5
Wipe the skillet with a paper towel and add the honey. Heat the honey until it starts to bubble, then add the ginger.
Step 6
Sauté the ginger for 2 minutes to infuse the honey with its flavor. Add the apple slices, and sprinkle with chopped walnuts.
Step 7
Sauté for another 2–3 minutes, turning the nuts and apples so they are coated in the honey caramel. If the caramel has completely soaked into the apples, add a little water. Then remove the ginger pieces from the pan.
Step 8
Fold the pancakes in half, then into quarters, and fry them in a skillet with vegetable oil on both sides.
Step 9
Place 2 pancakes on a plate, topped with apple slices and nuts.
Step 10
Serve the pancakes drizzled with ginger honey.
