Ingredients
- Sweet Potato - 12 oz
- Wheat Flour - ¾ cup
- Brown Sugar - 1 tablespoon
- Baking Powder - 2½ teaspoons
- Salt - 1 teaspoon
- Cayenne Pepper - a pinch
- Activated Baking Soda - ½ teaspoon
- Butter - 8 tablespoons
- Buttermilk - 0.3 cup
- Black Forest Ham - 6 oz
- Dijon Mustard - to taste
- Honey - to taste
Step by Step guide
Step 1
Boil the sweet potato in salted boiling water until tender, about 8-10 minutes. Drain, cool, and mash.
Step 2
Preheat the oven to 392°F. Grease a baking sheet with butter.
Step 3
In a large bowl, mix the flour, brown sugar, baking powder, salt, baking soda, and cayenne pepper. Add the diced butter and mix well with your hands. In another bowl, combine 0.75 cup of sweet potato puree and buttermilk, then add to the other ingredients and mix well with a fork. Turn the dough out onto a floured surface, shape it into a circle, and roll it out, sprinkling with flour as needed. Cut out round biscuits and transfer them to the baking sheet.
Step 4
Brush with softened butter and bake for about 20 minutes until golden brown. Cool for 10 minutes. Cut each biscuit in half.
Step 5
Spread mustard on the bottom halves of the biscuits, then place a piece of ham on top and cover with the other halves. Serve with honey.
