Ingredients
- Raisins - 6.3 oz
- Sherry - 4 fl oz
- Sugar - 10.6 oz
- Farm fresh eggs - 4 pieces
- Safflower Oil - 6 fl oz
- Vanilla extract - 0 fl oz
- New Potatoes - 4 pieces
- Wheat Flour - 12.7 oz
- Salt - 0.2 oz
- Baking Powder - 0.2 oz
- Ground Cinnamon - 0.4 oz
- Activated Baking Soda - 0.2 oz
- Nutmeg - 0.1 oz
- Buttermilk - 6 fl oz
- Brown Sugar - 3.5 oz
- Butter - 2.1 oz
- Cream - 1 fl oz
Step by Step guide
Step 1
Soak the raisins in sherry for 30 minutes or a few hours.
Step 2
Preheat the oven to 356°F. Grease a pie dish with oil.
Step 3
Beat the eggs with sugar well. Add sunflower oil and vanilla and beat again.
Step 4
Add 60 ml of the sherry from the raisins to the mixture.
Step 5
Boil the sweet potatoes until soft and mash them. Add the potato puree to the egg mixture and mix well.
Step 6
Sift the dry ingredients and gradually fold them into the egg mixture, adding buttermilk.
Step 7
Add the drained raisins and mix well. Transfer the batter to the dish and bake for 1 hour 20 minutes or until a toothpick inserted comes out clean.
Step 8
Meanwhile, make the glaze by mixing brown sugar, butter, cream, and the remaining sherry from the raisins in a pan. Heat until the sugar dissolves and the glaze thickens.
Step 9
Remove the pie from the oven and let it sit in the dish for 5 minutes. Transfer to a plate and, using a toothpick, poke many holes in the pie. Pour half of the warm glaze over the pie. Allow to set, cool the pie, and drizzle with the remaining glaze.
