Sweet Potato Pie with Raisins and Cinnamon
Ingredients
- Puff Pastry - 15.9 oz
- Brandy - ¼ cup
- Raisins - 1.8 oz
- Sugar - ½ cup
- Farm fresh eggs - 3 pieces
- Dry Curd - ½ cup
- Cinnamon - 1 teaspoon
- Ground Nutmeg - a pinch
- Sweet Potato - 15.9 oz
- Butter - 4 tablespoons
- Canned Pineapple Chunks - 7.1 oz
Step by Step guide
Step 1
Soak the raisins in brandy and let sit for 1 hour.
Step 2
On a lightly floured surface, roll out the pastry into a round and place it in the pie dish, leaving a 5 cm overhang. Fold and seal the edge of the pastry; prick the bottom with a fork. Refrigerate for 30 minutes.
Step 3
Preheat the oven to 200°C.
Step 4
Bake the pastry for 10-12 minutes.
Step 5
Reduce the oven temperature to 180°C.
Step 6
Boil the sweet potato until soft and puree in a blender. Add sugar, egg yolks, and the raisins with their liquid. Mix and, while stirring, add the dried milk, cinnamon, and nutmeg.
Step 7
Whip the egg whites to stiff peaks and gently fold into the mixture.
Step 8
Spread the filling over the pastry and bake in the oven for 45 minutes. Then, place the canned pineapple on top of the filling and bake for an additional 5 minutes.
