Sweet Rolls with Dried Fruits
Ingredients
- Wheat Flour - 12.3 oz
- Butter - 5.3 oz
- Sour Cream - 2 tablespoons
- Kefir - 7 fl oz
- Dried Apricots - 3.5 oz
- Pitted Wild Apricots - 10.6 oz
- Oranges - 1 piece
- Raisins - 2.5 oz
- Brown Sugar - 2 tablespoons
- Meyer Lemon Juice - 1 tablespoon
- Honey - 2 tablespoons
Step by Step guide
Step 1
Sift the flour, cut the cold butter into pieces and mix it until it resembles coarse crumbs. Add lemon juice, salt, sour cream, kefir, and knead a soft, not too stiff dough. Wrap in plastic wrap and refrigerate (ideally for a couple of hours, but 30 minutes will also work).
Step 2
Wash the dried apricots, prunes, and raisins, and grind them through a meat grinder (or whatever you have at home for chopping). Grate the zest from the orange, peel the orange and add it to the dried fruits in the grinder. Add honey and mix. You should get a thick, jam-like mass. If you’re tired, you can skip the baking - it’s delicious as is! :)
Step 3
Divide the dough into about three parts, sprinkle with flour, shape each part into a ball, and then roll it out into a thin circle. Cut the circle into sectors like a pizza (about 12 pieces), and on each wide piece, place a generous spoonful of filling; don’t be stingy - it won’t run out. Fold the wide edge over the filling, press with your fingers, and roll the roll towards the center of the circle.
Step 4
On a flat plate, pour out the sugar and add cinnamon if desired. Dip the finished rolls in the sugar, pressing lightly, and place them on a baking sheet lined with parchment paper or a silicone mat, sugar side up.
Step 5
Bake at 374°F until golden brown.
