Ingredients
- 20% Sour Cream - 17.6 oz
- Potato protein - 2 tablespoons
- Frozen black currant puree - 1 cup
- Puff Pastry - 1 piece
- Brown Sugar - 8.8 oz
- Vanillin - a pinch
Step by Step guide
Step 1
Whip the sour cream with sugar, gently add the starch, preferably through a sieve to avoid lumps.
Step 2
Roll out the thawed pastry: it usually comes in a roll, in which case divide the dough into two parts, roll each separately, and place one on top of the other.
Step 3
Line a baking sheet with parchment paper, place the dough on it. Evenly spread the sour cream mixture over the surface, then add the berries, or vice versa, first sprinkle the berries and pour the sour cream on top.
Step 4
Bake at a temperature of 170–374°F for about 40 minutes to 1 hour. You can check readiness by the cracks that appear on the sour cream — this means it has thickened enough. The pie should rest for some time (about 1 hour) in a cool place; it is better not to serve it hot, as it may burn you!
