Sweet Vermicelli
Ingredients
- Vermicelli - 7.1 oz
- Water - 13 fl oz
- Clarified Butter - 4 tablespoons
- Sugar - 12.3 oz
- Cardamom - 10 pieces
- Milk - 17 fl oz
- Saffron - a pinch
- Chopped almonds - 1½ tablespoons
- Chopped almonds - 1½ tablespoons
- Meyer Lemon Juice - to taste
Step by Step guide
Step 1
Pour the required amount of water into a pot, add sugar, and place it on the heat. Bring to a boil.
Step 2
In a separate pot, melt the butter over low heat. Add the vermicelli and cardamom. Cook over medium heat, stirring the vermicelli to ensure it changes color to golden brown evenly.
Step 3
Once the color of the vermicelli changes, pour in the sugar syrup. Cook on low heat for 15 minutes until the water evaporates, stirring constantly.
Step 4
Add the milk and bring to a boil. Add a little lemon juice (this will help the vermicelli absorb the milk). Continue cooking (stirring).
Step 5
Add saffron, almonds, and pistachios. Cook for another 1-2 minutes.
Step 6
Serve after the vermicelli cools slightly (it tastes best 20 minutes after cooking).
