- Wheat Flour - 1½ cups
- Brown Sugar - 1 cup
- Baking Powder - 2 teaspoons
- Salt - ½ teaspoon
- Chopped almonds - ½ cup
- Young zucchini - 10.6 oz
- Large eggs - 2 pieces
- Vegetable Oil - 0.3 cups
- Vanilla extract - ½ teaspoon
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a muffin tin with oil and place paper liners in each cup.
Step 2
In a bowl, mix together the flour, brown sugar, baking powder, cinnamon, and salt. Stir in the nuts.
Step 3
In another bowl, combine the grated zucchini, oil, eggs, and vanilla. Add the dry ingredient mixture and gently mix.
Step 4
Divide the batter among the liners and bake in the oven until done, about 40-45 minutes.
Step 5
Cool in the pan for 10 minutes and transfer to a plate. Let cool.
Step 6
Meanwhile, make the cream cheese frosting (see note) and generously spread it on top of the cupcakes.
