Swiss Chard Pancakes with Cinnamon and Spices
Ingredients
- Swiss chard leaves - 2 bunches
- Onion - 8.5 oz
- Farm fresh eggs - 4 pieces
- Coarse matzo - 3.5 oz
- Ground Cinnamon - 1 teaspoon
- Salt - ¾ teaspoon
- Ground Black Pepper - ¼ teaspoon
- Ground clove - ½ teaspoon
- Olive Oil - 5 tablespoons
- Lemon - 1 piece
Step by Step guide
Step 1
Trim the stems from the Swiss chard and chop the leaves into small pieces. Transfer to a pot and cover with water. Place on high heat and bring to a boil. Cook for 3 minutes until the chard is slightly tender but retains its color. Transfer to a sieve and gently squeeze out excess water. Let cool.
Step 2
In a small bowl, mix the eggs, finely chopped onion, matzah, cinnamon, salt, allspice, and black pepper. Stir well and add the Swiss chard. Mix again.
Step 3
Preheat the oven to 302°F (300 degrees Fahrenheit) and place a baking sheet inside to heat up.
Step 4
Heat 3 tablespoons of olive oil in a skillet over medium heat. Drop 1 tablespoon of the batter for each pancake onto the skillet and fry for 3 minutes on each side until golden brown. Transfer to the baking sheet and place in the oven to keep warm. Serve with lemon wedges.
